Festive biscotti with cherries on top
These festive looking Sicilian almond biscotti (image below) topped with red and green glace cherries are a soft almond punch of sweetness on the inside with a light golden chewy bite on the outside.
I (for some reason) bought ground almonds with the skin on (peeled was called for in the recipe) and I mixed and moulded the ingredients by hand. I didn't see the bit about using the mix master and didn't have a piping bag but...they turned out ok.
Skin on makes for more fibre chew. (Next time I could follow the recipe a little closer.)
Sicilian Sweetness
Cherries on top are not always easy to eat when sweetness is probably at its height and in fact topped with an almond is suggested in the recipe and I’m even thinking a piece of hottish crystallised ginger could be nice. Almond and ginger make for a good combination.
Three bambini were giving me a helping hand yesterday on a hot, humid Australian morning. They were so keen to taste them and they liked placing the odd cherry. I’m not sure these biscotti (well, my 'skin on' version at least) are the best almond biscotti for bambini.
A quick and super easy recipe ( Sicilian almond biscotti) and yes, good to have on hand for a coffee or drink particulary during the festive season.
