Summer in Polizzi: Ricotta and mint frittata

Summer eating at U Bagghiu  

During the summer in the back garden of Santina and Andrea’s restaurant, U Bagghiu (down Polizzi’s via Gagliardo) there are trees laden with pears and apples and tables sit under the shade of a wisteria vine and fruit trees. 

And to eat in the garden at U Bagghiu is for warm summer days .

 

Ricotta and mint frittata 

This summer at U Bagghiu I enjoyed Santina’s ricotta and mint frittata (more than once) sitting at a balcony table under the wisteria with views to the Madonie Mountains.

The ricotta came from Gangi, one of the stone villages of the Madonie and the mint from U Bagghiu's back garden. And with Sicilian wine Santina's frittata was a favourite this summer.
